Spicy fried potato curry

This is something what I like. It's quick and easy to make as well really good taste and cheap which is quite important when you are making food on budget. This recipe will feed 4 people all you need extra are pita breads.

You will need:

4 large potatoes
1 large onion
1 tbs salt
1 tbs crushed chilli
1 tbs cummin
1 tbs corriander
1 tbs Seekh Kabab spice mix or garam masala or just hot paprika
1/4 tbs turmeric
1/4 black onion seeds
4 garlic cloves
2cm or 1.5 inch square ginger
1 tin of chopped tomatoes
1/2 cup oil/ butter
1/2 cup of fresh coriander

First you will need to chop the potatoes to small cubes. Wash them and then drain the water. Heat up the oil on a frying pan to high, if you are using a butter it will have to be really hot before you put the potatoes in, just be careful.

Once the potatoes are frying chop the large onion and leave it a side. Then gather all your spices which you will need.
 

Stir the potatoes time to time, but make sure they will get golden brown. Maximum 5 min.

Once you are happy with the potatoes drain them from oil and set potatoes a side, then take two tablespoons of oil what you drained and fry the onion.
Once the onion is fried add the spices and the tin of tomatoes. Turn the heat to medium and add 1 cup of water and put a lid on. Cook it on medium heat for 5 min to get all the spices out.
After five minutes add potatoes and stir everything in, and leave it on medium heat for maximum 2 minutes, after which add the fresh coriander and stir again. turn off the heat and put the lid on and leave it to stand for further 5 minutes after which its ready to be served with pita breads.
